I'm probably wrong but the "barman" clue makes me think Steve Spiers for Biter.
He was Gash Nesbitt and a Barman. Not sure about the bully or potato clues.
He plays a night-time bully, a guy named Spuds (potato), a guy named Gash, and was in Fifty Dead Men Walking.
So...Andy Beckwith as Rorge and Gerard Jordan as Biter.
I think the WiC folks have it right: Gerard Jordan. As a kid he met Bill Clinton - the Big Dog - he's played a character called Gash, another called Spuds, been in Fifty Dead Men Walking, and a 'Night-Time Bully' is on his credits.

He played bullies often and I'm pretty sure one or more of his characters got "gashed" by somebody.

Your best bet, even to become an extra, is to figure out who Nina Gold goes to for extras. Where you get that information is beyond me.
